“Pasta and…” is a charming 30 seat Italian bistro in Margate specializing in homemade pasta and sauces.  The restaurant’s bold, rustic colors are inviting and the walls chock full of photographs and posters depicting life on the Mediterranean.

Owner-operators, Luigi and Esperanza Marenco make you feel right at home. Along with son, Gian Marco, the two bring authentic Italian specialties to Margate from Italy’s Piemonte region, high up on the boot in the northwest corner.  They make all their pastas and desserts from scratch and maintain what they call “a fresh approach to old, Italian traditions” such as classic lasagna with a besciamella and arrabbiata tossed with homemade bucatini and red chilis.

Warning! Homemade pasta is a world apart from what most of us were raised on. Once you grow accustomed to fresh pasta at “Pasta and…,” frozen or boxed semolina might never do again.

We decided on the Petto di Pollo Della Casa and Linguine Pescatore for our first visit to the restaurant. The chicken – pounded oh so thin – was smothered in a rich mushroom reduction, finished with zesty sun-dried tomatoes and a dash of Madeira -- ala roasted red peppers and a a sprinkling of gorgonzola.

The Pescatore – host to tender littlenecks, calamari and tiger shrimp – was alive with fresh parsley, basil and the perfect abundance of garlic butter which we proceeded to ‘slather up’ with "Pasta and’s…" herb encrusted toast.

The meal reminded me of growing up in New Jersey, just a few doors down from Fred Caruso, Production Manager for the Godfather. Daughter Lori and I played in the neighborhood and dinner at the Caruso’s was always memorable – Mrs. Caruso prepared some of the finest Italian food I’ve experienced to this day; old-world dishes painstakingly prepared from fresh ingredients.

Truly, no Italian meal is complete without cheesecake. The real thing, that is, not the ‘New York Style’ stuff made with processed cream cheese. Esperanza’s Florentine-influenced Ricotta Cheesecake tantalizes the palate with orange zest and caramel lace. Quite the taste experience.

“Pasta and…” has beer, wine, rich dark espresso and good service. Luigi and Esperanza are located at 4990 W. Atlantic Blvd., are open for lunch and dinner and gladly accept reservations. 954-977-3708.

“Pasta and…” a best-kept secret in Margate.
